Balsamic Salad Dressing

My son and I work on the garden every evening when it gets cool.  I love that fact that my teenaged son likes to get out and dig in the dirt with me.  Last night as we were wrapping up the rain started and we heard emergency sirens.  We put our tools away and went inside unaware that a couple miles away tornadoes were touching down in our small town.

We were pretty alarmed when the hail started but amazingly the garden was not damaged.  I cannot understand it as the plants are so young and delicate.

I did not know about the chaos that hit our little Colorado town and the nearest town Berthod.  At least 25 structures were damaged last night.  After our epic floods of 2013 in Colorado we just cannot sustain much damage since some places are still recovering like Jamestown Colorado.

I hope we do not get massive flooding again this year so my fingers are crossed.

On a good note I have not needed to water the garden as often and the garden made it through the storm last night.

On a lighter note my favorite new salad addition this spring  is baby mustard greens.  So spicy and delicious.  These greens pair well with a sweet balsamic dressing.

I had to thin the radish bed and harvested some incredibly darling little radishes and had to snap a few pictures.

Balsamic Salad Dressing

Sweet and full of bright herbs this is a great salad dressing to compliment spicy greens.

Recipe type: Salad Dressing
Serves: 6-8 servings
Ingredients
  • 3 tablespoons balsamic vinegar (I use the balsamic from Costco)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove minced
  • ½ cup olive oil or avocado oil
  • 1 tablespoon finely minced fresh herbs like thyme, oregano, basil, parsley or rosemary
  • salt and pepper to taste
Instructions
  1. Mix all ingredients in a ball glass jar or other container with lid. Shake until combined.
  2. If you are in a hurry you can mix dressing with a immersion blenders.
  3. No need to add oil in a steady stream since the mustard will emulsify the dressing quickly.

My heart goes out to the people who lost homes last night and I pray we will not get more flooding this year.
